Peanut Butter & Oat Cookies

So my child loves sweets. I don’t know who the heck he got that from, but here I am dealing with it while trying to raise a healthy kid.

(He got it from me).

These cookies are so easy to make and chances are, you may already have the ingredients in your pantry so give them a go ASAP. Your little ones will love them and they’re perfect with coffee or as a quick protein hit too!

Peanut Butter & Oat Cookies

makes 12  

3 cups of rolled oats  

1.5 cups good quality peanut butter  

2 tablespoons of honey (or maple syrup to keep them vegan) 

1/2 teaspoon cinnamon  

Add half a cup of anything you like in cookies. Xavier loves raisins, I love dark chocolate - both work well in this recipe!  

Mix all ingredients together in a bowl until well combined

Using a cookie scoop or tablespoon, form balls and press gently into the shape you would like them to bake. If you find the recipe too try to form balls, add a tablespoon of water and mix well to help the balls bund well. These do not spread so you can fit them all on a lined baking sheet. 

Bake on 180c until golden (about 12 minutes)
