The Working Lunch



Lately, there's something that's been happening more often than Elaine and I care to admit: having lunch at our desk. This has become such a normal event in our day to day life that we practically don't even remember what it's like to grab a bite without the lap top and email open.

What I can say, is that in the time it takes to run out and grab something, we often throw together the most delicious working lunches- and all with ingredients we already have on hand. I often did this when I was a high school teacher, because I don't love dinner left overs reheated in a microwave, and the local cafes just didn't cut it. All I needed was a kettle for my tea and a sandwich press and I was good to go!

One product that has joined our hot beverage repertoire is FruitBroo - a delicious alternative to tea that also mixes deliciously into icy cold drinks for the warmer days too! Elaine and I recently whipped up a 10 minute working lunch and for a little added luxury (and to make ourselves feel better about not leaving the office for 24 hours), we sampled three of the delicious FruitBroo flavours: Peach Pear & Honey, Rhubarb Apple & Cinnamon and BlackberryApple & Plum. One bottle of each flavour makes 30 cups of tea, so of course it was only right to have a few, no?

To whip up the express PSS working lunch for two, you will need: 4 x spinach wrap/flatbreads 2 heaped tablespoons of pesto A handful of olives Cheese (we used feta and colby) Sliced tomato A handful of rocket or baby spinach

Turn on the sandwich press and allow to heat.

On a flat bread or wrap, spread 1 heaped tablespoon of pesto like a pizza base, and top with olives, feta, tomato and rocket/baby spinach. Sandwich the toppings with another wrap, and toast in the heated press until golden brown. Cut into triangles and enjoy with 3 cups of FruitBroo tea. Yes, I said 3.
