Mango Frozen Yogurt

MANGOFROYO-3If there's one thing Kevin likes to keep stocked up in our house, it's ice-cream. He absolutely loves the stuff and would have a little after dinner every night if it's available. When we came back from the US, it took me a little while to get my place back in order. I don't know why, but I kept forgetting to buy ice-cream when I did the weekly shop. There came a night a few weeks back when I was suddenly hit with a craving for froyo and I definitely didn't feel like venturing out to Newtown to get it. I already had three ingredients that I had picked up from Aldi that day and I figured that maybe I'll just throw them into the food processor and hope for a delicious result.

Sweet Success. Kevin even said that he's happily forego ice-cream if this was on the menu. I've tried it with mixed berries, frozen bananas and so far, my two favourites are mango and blueberry. Considering it is mango season, now's the time to get chopping and freezing the stuff for summer smoothies and desserts. Or you could just inhale them fresh like I do and buy a big bag of frozen mango pieces from Aldi for about $6. Best part is, it takes all of 5 minutes to make it. Hello summer entertaining!

Oh, and I'm never buying froyo again.

Mango Frozen Yogurt Makes 2 very generous servings

You will need 2 1/2 cups frozen mango pieces 1/3 cup Greek yogurt 1/3 cup Vanilla yogurt

Place all ingredients in the bowl of a food processor and pulse until until the yogurt has coated the mango pieces.

Process on medium speed for approx 30 seconds at a time. Occasionally scrape down the sides of the bowl to ensure the contents are blending well.

Blend until smooth and creamy.

TIP - you can replace the dairy with coconut yogurt for a vegan dessert. You may need to add 2 more tablespoons as it's considerably thicker than dairy.
